The Boston Butt is the pit masters' preferred choice for pulled pork. This cut of pork is from above the shoulder blade which contains more marbling, making it suitable for low ’n’ slow barbecue smoking.

From free-range, west country pigs we prepare the meat so it is ready to cook.
