This is one of those recipes that I love. Something super tasty that comes together quickly and easily, but tastes of a lot more. It is a perfect snack, it also makes a fantastic breakfast pastry. These will be great for Christmas!
One pre rolled puff pastry sheet from the supermarket (all butter is best)
100g Smoked Nduja
150g diced cherry tomatoes
75g fine grated mature cheddar cheese
1 egg, beaten
Sprinkle of mild chilli to finish
Preheat your oven to 200C (180C fan).
Combine the nduja, diced tomatoes and cheese and mix well.
Keep your pastry in the fridge until just before you need it for best results. When you are ready to fill the pastry, remove from the fridge and gently unroll it. Cut the pastry in to six roughly equal size rectangles.
Turn the individual pastry pieces so that they are oriented in a diamond shape. Put the filling from the top corner to the bottom through the centre off the pastry and about an inch wide, dividing evenly between the 6 pastries.
Gently fold the sides over, one on top of the other. Brush the pastry with the beaten egg. Bake on a sheet of greaseproof paper for 18-20 minutes until golden brown.
Finish with a sprinkle of chilli and some finely cut chives. These eat best hot but are good cold too. Enjoy!
