Leftover Chicken Tikka Curry with Rice

 

🍛 Start by frying two sliced onions and a chopped red chilli in a tbsp of oil
🍛 Add 100g of tikka paste and stir
🍛 In with 3x quartered salad tomatoes
🍛 Add your leftover chicken (we had 180g leftover and added a 110g chicken breast for extra protein)
🍛 In with half a tin (200ml) coconut milk and stir then simmer
🍛 In a separate pan add half a cup of white rice and a cup of water. Bring to the boil then simmer until almost all the water has gone, before stirring in a tsp of garlic powder and a tsp of turmeric
🍛 Transfer the rice to a sieve and pour over a little boiling water
🍛 Finish the curry with a handful of chopped, fresh coriander and if you like a bit of extra green, I also added a handful or two of baby spinach to my portion!

We had a dollop of soured cream and half a naan bread each, but without the extras, the curry and rice came in at 607 calories total. This will serve 2 large adult portions and works out (minus the cost of the leftover chicken), around £1.48 per portion - madness!! So much flavour for next to no cost. You HAVE to try this!
