Cheesy Chipotle Enchiladas

The easiest cheesiest Chipotle enchiladas! Not a particularly attractive plate of food that’s for sure, but really easy to do, tastes amazing and an ideal mid-week meal that takes 45 minutes from start to finish.

Here’s how:

🫔 Spray 20 sprays of extra virgin olive oil spray into a pan
🫔 Brown off the steak mince (425g), then add one chopped red onion (101g) and two sliced cloves of garlic
🫔 Add a tablespoon of ground cumin and 2 tablespoons of Chipotle paste
🫔 Add 100ml of water, then crank up the heat and stir together
🫔 In with a sliced red pepper (154g) and half an orange pepper (83g)
🫔 Add a tablespoon of dried parsley then season with salt and pepper to your taste
🫔 Using four tortilla wraps, distribute the mix evenly, wrap tightly and sit next to each other in an oven dish, using any extra mix to lay over the top
🫔 Add 150g soured cream to a tbsp of water and mix, then spread over the top of the wraps
🫔 Top with grated mature cheddar and bake at 200° for 20 mins
🫔 Whilst baking, mash a large avocado (218g) with a squeeze of lime juice and some chilli salt
🫔 Serve one cheesy tortilla per person, with a portion of avocado and a handful of crispy tortilla chips for scooping up any spilt mix!

Serves 4 portions, ready in 45 mins and perfect for the whole family at only £8.66 total / £2.16 per portion.
