Beef Shin Stew!

This serves 4 large portions (with mash) at £2.07 per portion. Rich, autumnal flavours, perfect for a rainy day. This can be done during the day in the slow cooker (or even on a Sunday afternoon in the oven).

Here’s how:

🐮 Spray 20 sprays of extra virgin olive oil spray into a pan
🐮 Brown 400g beef shin off in the pan then add in a chopped red onion (90g)
🐮 Add two chopped garlic cloves and stir
🐮 In with 4 large, quartered salad tomatoes (293g) and 175g chopped chestnut mushrooms
🐮 Chop and add two raw carrots (132g)
🐮 In with 150ml red wine to deglaze!
🐮 Add 3tsps Worcestershire sauce and a heaped tsp of marmite
🐮 Shake in a tbsp of dried, chopped parsley, followed by a 400g tin of chopped tomatoes and a tbsp of tomato purée
🐮 Top up the liquid with 200ml of water then stir through with a pinch of salt and crack of black pepper

EITHER
🐮 Slow cook on low for 8 hours (perfect for during the day whilst at work!)
OR
🐮 Add to a large ovenproof dish, cover with foil and bake for two hours at 170° (best for a Sunday afternoon)!

We had ours with mashed potatoes (simply 650g of Maris piper potatoes, peeled, boiled, drained then mashed until smooth with 30g of lightly salted butter).
