What is Biltong?
Biltong is a dried meat tasty bite which originated in South Africa. A product made from high quality beef although other meats are used such as venison and exotic meats such as ostrich.
Biltong was borne out of the necessity to preserve meat in the hot African climate. These were the days well before refrigeration. The resourceful Voortrekkers, native of South Africa, solved the problem by slow drying strips of meat in the open air which preserved the meat which could then be stored for months without spoiling. The meat was found to be hard on the outside whilst capturing all the flavour inside. No cooking is involved in the curing process.
It would have been hard to imagine then that the necessity to preserve meat for the early travellers, would create a whole new eating sensation today.
Biltong is similar to jerky but without added sugar and a much higher protein level. Biltong is low in sugar, low in carbohydrates and contains about 60% protein. It is a tasty convenience food, loaded with healthy nutrients and enzymes.
